Lunch! from:

"Sassy Sweet Potato Skins"

I made some changes from the original recipe because I didn’t have corn, brown sugar, or onions. 

I mixed my mashed sweet potato with peas and mozarella cheese, then topped it with a slice of provolone. Then put it on a bed of spinach with 1/2 avocado and the rest of the sweet potato/pea mixture

  • 1 slice of toast with 1/2 avocado, 1/2 tomato, spinach, and 1 egg
  • 1/2 grapefruit with truvia
  • Coffee

A well balanced meal
1/2 grapefruit, tortellini with peppers and chicken, tomato & cucumber with balsamic vinegarette, and pineapple cottage cheese

Part of lunch:

tomato, cucumber, and feta cheese with balsamic vinegarette

you best believe I had 3 bowls

Finally getting back to healthy eating. The hurricane really got me off track with everything. For a month and a half we lived with my cousins and ate whatever they had, then we moved into an apartment with minimal kitchen space so I just settled for the easy stuff. But anyway, 
Tuna wrap with a little bit of mayo and 1/2 a pepper

This was part of a pork loin dinner, its a mix of chopped brussel sprouts, turkey bacon, apple slides, spring beans, and sweet potato all marinaded (i think) in some good tasting thing that my mom made
