“Sassy Sweet Potato Skins”
I made some changes from the original recipe because I didn’t have corn, brown sugar, or onions.
I mixed my mashed sweet potato with peas and mozarella cheese, then topped it with a slice of provolone. Then put it on a bed of spinach with 1/2 avocado and the rest of the sweet potato/pea mixture

- 1 slice of toast with 1/2 avocado, 1/2 tomato, spinach, and 1 egg
- 1/2 grapefruit with truvia
- Coffee
